Amaretti Virginia - Confectionery and Biscuit Creations Since 1860
Sweets and treats are shared at any age. Able to capture everyone's attention, they can never be missing from the table, even after a hearty meal.
Amaretti are no exception, the small round candies made from almond paste, with the Ligurian company Amaretti Virginia being a symbol of quality in Italy and around the world for over a century and a half.
Synonymous with quality and refinement since 1860, the year of its foundation in Sassello, in the province of Savona, Amaretti Virginia now offers a broad range of Amaretti (Italian macarons).
The Story of Amaretti Virginia
First, a brief overview of the history and composition of this macaron that has become a cornerstone of Italian confectionery. The term "amaretto" (the singular of ‘amaretti’) refers to a type of biscuit/maracon made from almond paste, prepared with sugar, egg whites, sweet and bitter almonds, and armelline (apricot kernels). There are two types of amaretto, one from Saronno, which is known for its crumbly and crunchy texture, and one from Sassello, with Amaretti Virginia being an important representative of the latter.
It is enough to say that the confectioner who produced this incredible treat for the city of Savona achieved such fame that he even gave his name to the square where it was located: "Piazza degli Amaretti Virginia," which even made its way onto old postcards.
Thanks to their unique taste and the reputation they have built, these Italian macarons were quickly appreciated at the most important international exhibitions.
Among them: the diploma and first-place medal awarded at the 1892 Colombiadi in Genoa, as well as the gold medal and special honor received in Paris in 1911, where the delicate flavors of Virginia won over a high-level jury. These awards and honors are still kept in the historical archives of Amaretti Virginia.
Attempts to imitate Amaretti Virginia were so numerous from the outset that the company’s founder placed the Virginia brand under the protection of the laws of the Kingdom of Italy as early as 1897.
Amaretti Virginia: Between Tradition and Modernity
At Amaretti Virginia, tradition is paired with a constant search for production development through the continuous evolution of the culinary and confectionery world.
The centuries-old experience passed down by the company’s founders merges with the modernity of new tools and machines provided to the confectioners and employees, who, drawing on their precious creativity, direct their work towards the main objective of Amaretti Virginia's production philosophy: the ongoing pursuit of absolute quality.
A passage from the company's official site perfectly explains this concept:
“At Amaretti Virginia, it’s not the products and recipes that adapt to technology, but rather the machines that are specially designed with respect for the product.”
Thus, the whole company adapts to what the process requires, with the product being the true commander of the operation. It is not the worker who creates the pastry; rather, the food conditions the person and their movements.
Since 1860, Amaretti Virginia has been coloring and flavoring Italy's tables with its wide range of products. The company’s current assortment includes not only the famous soft macarons, available in different flavors, but also a wide range of confectionery specialties, including traditional candies and other treats for every holiday and occasion. However, it is the macarons that outshine the competition, as they dominate all of Amaretti Virginia's creations, thanks to their centuries-old history and consistently high-quality standards.
Amaretti Virginia Products
The famous Sassello macarons, while maintaining their classic spherical shape, are much softer than the aforementioned Saronno macarons and have a marzipan-like texture to the touch. Although amaretto (the singular of amaretti) originated in Italy during the Middle Ages and spread to the Arab countries and across Europe through trade, the Sassello variation owes its origins to a much later idea, around the 19th century. The original recipe has never changed over the decades and is still used today, based on sugar, sweet almond powder, egg whites, and bitter almonds.
